How prevalent is it? Like I'm in a university where we eat in the dorms and we have a canteen where we can buy Chinese food. I have eaten for a while here with no issues but like what's the uhh I dunno affected areas cuz like I have eaten out and still been fine.

Like should I just watch out if imported Chinese food ingredients is used or what?

Not every Chinese food restaurant is dangerous, but if they import ingredients from China, then it can be dangerous.
I think you should ask for guidance from Satan, if you should eat their food or not. If it's dangerous, he will definitely warn you.

Life expectancy in mainland China has risen nearly 10 years in the two decades I have lived here. Obesity is a very marginal problem, and I do mean marginal. One sees a lot of highly active folks over 70. All of which verges on anecdotal data. Still the general state of health here scarcely seems impaired. Among men heart disease is high. But that is arguably due to the nigh ubiquity of smoking and drinking rice vodka (二锅头) among working-age males. Diabetes is high, but that a lot of that is adult-onset diabetes come from overeating paired with middle age.

Listening to Westerners talk food, I am minded of Alastair Crowley's bon mot, "Of old Englishmen feared neither hurricane nor whirling dervish. Now each is afraid of his beefsteak."
