In my opinion every book that you can get your hand on is an exellent start since the most important factor in Ayurveda is to understand how the three doshas work, their make up qualities and significations.
Ayurveda is a spiritual science that shows how the spiritual energies work and operate behind the biological facet of existence.
The principle of the three doshas are based on the Tripartite Godhead:
Pitta is rooted in Agni, the divine principle of Fire. Vata is based on Indra, who represents the highest form of Prana as eletctric/lightlning energy. Kapha is the gross counterpart of Soma, the Divine Water of rejuvenation and preservation.
The nature of the doshas reflect the nature of the corresponding Divine energies. If you understand how these work on one level you can apply it to all levels.
For example you have a kapha based psychological problem of dullness, unable to let go of the past and resistance to change. If one knows that Kapha is a Earth-Water based force with the qualities of heaviness, dampness and cold, all you have to do is to do a working that increases the qualities in you that are the opposite of Kapha, ie. Hot, Light, movable and Dry. You would apply the same principles if you were to treat a simple cold, which is Kapha based: Drink some ginger tea (input of heating, purifying light energy) doing some Sun Salutations etc.

-Mantra Yoga (Contains a chapter that shows how mantras can be used for ayurvedic healing)
-Tantra Yoga and the Wisdom Goddess (a Chapter explains how Tejas, Prana and Ojas work, the subtle and positive counterparts of Pitta, Vata and Kapha)
-Soma in Yoga and Ayurveda (focuses on rejuvenative practices)

The last two are the most important as they purely focus on explaining the principles of Ayurveda.
