If I did a dedication ritual, left and joined Catholicism and did sacraments, will I need to do another dedication ritual when I come back?

No, but you need to restart the spiritual practices in earnest that time around, and likely would need to do some extra work to offset the error of wasting time and gathering negativity.

I agree with Henu the Great, you can also pray and join in our current ritual Schedule to begin solidifying your connection to the Gods again.
