Is there are techniques for learning Soul's age ?
There is past life regression meditation on jos, I know it.
But isn't there are other methods ?
Like Astrology or other occult areas ?

If in astrology, at birth chart which factors influence this ?

I don't think there is any other method other than past life regression. You can also learn for yourself as far as I know, talk to your past life body during regression. But it takes a lot of time.

You can look up on a search engine the soul ages. Of course there is some enemy teachings mixed in with a lot of it. In general though the Descriptions are useful.

This is the article I read one time that I found most in depth on this. I don't see that there was a lot about it on this forum or the JOS site.

I don't know as an astrology chart can tell you the Age of a soul in any way other than the older souls seem to know how to time it or choose certain things. So if it looks like part of the chart was chosen by the person (by there being several things there like grand trine or sun trine moon exact or something or planets being lined up in a certain way) it is likely the person is an old soul. Other than that it doesn't say a lot on this.

Focus on the seal of the Lord Satan and respectfully ask Him. You may hear a specific word in your head; while watching a movie a phrase or word may "hit" you or you may get a premonition.
The ways are countless. You just have to be open to the answer.
In my case, I heard the word "Cheops" in my head. I saw when he reigned and did simple math and already knew how old my soul was approximately.
