What I want to know is, having known Zevists who've decided this path wasn't for them for one reason or another, are they punished by this by the gods, should they never come back after dedicating? Are they welcome back should they decide to come back?

Question #1344: What happens to those who leave?
Do you punish an obese person for leaving the gym? They are punishing themselves. The Gods want to see us succeed, but its up to us to do it. If someone decides that they are going to dedicate their life to playing a video game instead of advancing thats their choice to make. Nature takes care of the rest.

The only real 'punishment' related to this is that people waste time and or give up on the greatest opportunity of their life. Gods are not related to this stupidity. If one decides to leave for whatever reason, it is on them and their fate will simply run its course.

This is the targeted message.
What I want to know is, having known Zevism who've decided this path wasn't for them for one reason or another, are they punished by this by the gods, should they never come back after dedicating? Are they welcome back should they decide to come back?
The Gods do not force anyone to stay. If someone is foolish enough to do such a thing then such a person is losing the most wonderful things. Later they will regret it.

Nobody punishes those who leave. To be more accurate, they didn't really "leave" because the dedication ritual is permanent, the enemy can no longer take them back nor can they join the enemy completely. Satan and the Demons will still take care of them after they die.
They just chose not to practice and not be Zevists for a while but they can return and start practicing again things like meditations and rituals. There's not anything additional they have to do should they chose to come back, because the dedication ritual is still in effect.

It depends on how powerful their soul is. If they didn't do much, LARPed a bunch of rubbish, yet still on a low level, nothing will really happen other than their own fate and their own mental illness, plus whatever enemy curses apply to much of humanity.
If they've gotten higher and stop doing everything, that can be highly dangerous for the reasons HPS Pythia stated before. You can't just climb down from a routine like this, it causes all sorts of imbalances in the soul to stop doing everything, which is exactly why the mythology has so many stories with instructions to NOT LOOK BACK. Also, you are basically glaring on the Astral, so all of that applies too.
