Internal organ consumption

I asked this on the newly opened platform and wanted to ask here too.

I am a chef. And I don't think it's right to eat the internal organs of animals. Because most of them are organs of the excretory and digestive systems, so eating them feels like disrespect to myself. And those organs taste really bad. I've eaten both my own and other people's internal organ dishes and I really didn't like the taste. In fact, one of the chefs at my old workplace said that we cooked an internal organ just because it was on the menu and that he didn't even eat it. What are your thoughts on this?

The organs are where most of the nutritious value is. People refusing to eat liver and just opting only for sausages, bacon, steak and chicken breast have willed a bunch of problems on themselves. Doubly so for those refusing to eat meat whatsoever. Even those inclined to eating only plants would improve their health if they occasionally or even once a month ate small amounts of organ meat and abstained otherwise.

Boomers have the best health of any recorded generation in many metrics due to having access to organ meat in their youth that their parents pushed on them, even if they hated the taste.

If you don't want to eat giblets, no one is going to force you to eat them - period. But a heart or brain - this is one's personal business.

Liver, however, is a different kettle of fish. Rich in iron, so you know - good for carnivores.

And you said the key word - YOU didn't like them. Doesn't mean others won't.

as a turk its something that i dont understand. its disgusting i think. i dont even like red meat bc it feels...ugh(unclean?). And i think organs are worst bc they look so disgusting,when i see them uncooked or cooked i feel like to vomit lol. Fish and seafood is always feels ok and clean even if they are not that clean

Liver, and chicken hearts. I grew up eating chicken hearts once a week, with mushrooms and onions. It was my favorite meal.

Broth is the best for people who do not like the jiggly weird stuff. I was a picky eater so my mom would cook everything -rice, soup- with broth.

idk why people mix their food and they enjoy it. cooking and eating the meat and vegetables in same plate\pan mixing their flavor or dipping the cookies to their tea. it gives me nausea lol <3

Broth is the best for people who do not like the jiggly weird stuff. I was a picky eater so my mom would cook everything -rice, soup- with broth.

I quite like organ meat, personally.

In fact, this has made me want to buy some pork liver pate. lol

Completely normal and healthy, why would you throw these part out and waste millions of tons of food?
Efficiency is important, we can not waste resources like this.

Fancy restaurants like the Michelin star ones cook strange disgusting things on purpose just because they are trying to be different from everywhere else. I just watched a video from some fancy restaurant in England that shows cooking techniques, and the video was about one of the most famous michelin star recipes. It was a pig's foot that is hollowed out and has a lot of other shit stuffed into it. They cooked it for the old man who invented it, and they asked him what made him decide to use a pig foot. And he said just because nobody else would.

Well y'all inspired me to get some beef liver pills and try those. I will answer and say if it helped me. Because nothing like that is part of my diet. I will say if it is effective, but it is a good idea for most people who would never want to eat something like that. If it is that nutritious, put it in a pill so we can just swallow it and pretend that it is something else.

Here in Spain, the consumption of viscera and organs has always been very popular, and there are a large number of traditional dishes related to this. Who hasn't heard of the famous Madrid-style tripe, pork knuckle, pork liver pâté, or the famous blood sausage?

In the past, organ meat consumption was very common, and it is still practiced in many rural areas of Europe.

It is a typical dish in the cuisine of northern Italy, called zampone. It is a kind of salami. Nothing innovative strange or out of the European culinary tradition I can assure you.

People ate all those parts of the animal because they didn't have the industrial farming that we have now. There was not so much meat available and it was expensive, so they were not able to waste any part of it. Also how it used to be popular to have very large families like 10 children or more, they did not have money to feed all of them the best quality meat. They got whatever part of the animal is left because it is cheaper.

That is where the saying "high on the hog" comes from when somebody is doing well financially. That is an old saying from like slavery times in America. The owner of the farm has enough money he can afford to eat only the best meat from the pig, and the slaves and other poor people could not afford that, so they ate mostly the organs and the feet that are lower on the animal.

I still refuse to touch chicken or beef with my bare hands, but somehow I need to rinse it and then fry it. I guess it's just a matter of getting used to.

Btw, now that you've said it, does the perception of meat being 'unclean' come from the fact that well, you have to prepare it before making it edible, or is it some sort of ideological perception? Think about it Sis :)

Do tell. And let them help you. Sure, preparing liver may not be the cleanest business, but iron, IRON I say. Sooo if there is an alternative to get liver iron, sure :)

I've eaten and enjoyed pigs foot when pickled, and cooked in the oven until tender.
Alongside liver, which i happen to really enjoy.
