Can I do foundation meditation with my eyes opened? For example if i go outside and absorb energy from the sun with my eyes opened?

Yes, absolutely. In fact, you can do pretty much every meditation with your eyes open; it all boils down to concentration.

I found out I am more concentrated when meditating with eyes open as then I can focus on one spot whole time and with that be more concentrated while with eyes closed my mind is just more prone to drift away
