Simple answer is that raising cattle and livestock takes up a vast amount of land and resources. Right now the Globalists, Jews, and Marxists are pushing Agenda 21 to move humans into urban centers for easier control.

Historically the elite push vegetarianism (now shown to increase risks of cancer, most likely as a result of pesticide exposure, so soft kill) and veganism to lessen the impact on the environment while they continue to lavish themselves with the meat they tell you that is bad.

Cattle and other livestock can be raised on marginal lands that are unsuitable for crops. Putting some cattle on a piece of land, letting them graze, and gathering up the cattle every now and then for a checkup is much less damaging than an intensively managed piece of cropland. A vegetarian diet is not "environmentally friendly." Cropland is kept chemically sterile with pesticides and herbicides and those poisons damage everything in and around the area they are applied to. A modern orchard is barren aside from the trees and even the trees are sick due to the incessant chemical applications and require regular applications of fungicides to keep disease at bay. There is no grass under the trees and no birds in the orchard as the birds are chased away because they will eat the fruit. Humans have to eat to live. The problem is that technology has been held back and natural methods of pest control discouraged so companies can make more money off of chemical sales.
