Why would the elite use a lot of Saturnian symbolism (black cubes everywhere, Blackrock, etc) if Saturn is the planet of poverty and suffering?

Black as a color itself is often used or worn by wealthy individuals.

Does it have to do with Saturn through the root chakra actually been key to building wealth in some way?

I haven't the faintest idea. The Black Cube acts as an energy antenna, accelerating magical manifestation. It was also used to mitigate the effects of Zuhal. To me, Saturn is a complete mechanical system of cause and effect. Therefore, it must contain the causes of prosperity and power, as well as the causes of poverty, misery, and suffering.

Saturnian principles such as perseverance, endurance, foundations, discipline, and structure. All of these, and more, are key to success in the material and also in the spiritual realm. The base is where the growth propels upward. No proper foundation, no proper structure, no proper growth.

With what Henu said, Saturn is a planet which can provide extreme power and in some cases even luck, when sublimated properly... make it your friend rather than an enemy.

Yes that's what I meant, as in the fruits of your labour will bare greater rewards as they are more "ripe" on fertile land

As a Saturn worshipper, I can say that this is a planet of suffering in the sense that Kronos can teach lessons through suffering, respectively, it is progress through suffering and through work, and work in the eyes of Saturn is always rewarded. People used to say - "you'll reap what you sow" and that's the main principle of Saturn. At the moment, I am going through the trials of Saturn in my life, but this should not be perceived as some kind of bad influence, on the contrary, Saturn is a teacher who allows us to grow. I have problems with discipline myself, but I'm working on it, which is why I believe that the Gods associated with Saturn's energy respond so well to me
