Is it possible for a person's Guardian Daemon to be a Demon that isn't listed on the website? How would one go about finding out who they are and what their name is if they aren't listed? Could I ask to be shown a sign as to whether they are or not?

Yes, it is possible. There are many gods
You shouldn't worry much on finding out their name, it doesn’t matter much. Simply just address your guardian demon in your prayers and they will hear you
just like this “my guardian demon, please guide me on ____”
Later in your advancement when communication is easier they will reveal themselves to you more and more
